Bubba's Cheesy Shrimp Delight

Went to the freezer looking for dinner and found nothing but a bag of frozen shrimp. I wanted comfort food. Yea, you know the kind that sticks to your ribs and makes you feel warm and gooey all over! Threw this recipe together in 20 minutes and the better half liked it as much as I did.

  • 1 lb uncooked med. shrimp (51-60 ct) (deviened / Shelled
  • 1/2 stick butter
  • 2 tbsp. Olive Oil
  • 1 tblsp. lemon pepper
  • dash cayenne pepper (optional)
  • 1 cup Instant Rice
  • 1 tblsp. minced garlic
  • 1 small onion chopped
  • 1 can Campbell's Cream of Shrimp soup
  • 1 cup shredded sharp cheddar cheese


Put butter and olive oil in heavy deep skillet. Saute onions until clear. Add shrimp, seasonings and garlic. Continue cooking for 5 minutes. Cool 1 cup of instant rice and set aside. Add soup to skillet and reduce heat to low. Stir well and let simmer for 5 minutes. Add cheddar cheese and stir till blended. Add cooked rice to skillet and mix together. Serve in bowls. Enjoy!
