The Ribbon - Care for Caregivers
Bubba's Shrimply Marvelous Pasta Salad

Kurt Bradley from Auburndale, Florida says:
This will satisfy your craving for something "cool".
It is ready in 15 minutes, but tastes better when allowed to sit in airtight container in refrigerator overnight.

Prep Time: 15 minutes

Quick and Easy
Easy to Chew

Ingredients:

  • 1 box mixed tri-color pasta shells
  • 4 scallions minced (greens and all)
  • 1 tablespoon lemon-pepper seasoning
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon oregano
  • 1 tablespoon sweet basil
  • salt & pepper to taste
  • 2 tablespoons sugar
  • 2 tablespoons sun-dried tomato paste
  • 2 tablespoons minced garlic
  • 1/2 cup extra virgin olive oil, 1/2 cup Ranch dressing
  • 1/4 cup raspberry vinegar (flavored vinegar you prefer)
  • 1/2 cup Parmesan cheese
  • 1 pound frozen salad shrimp (200-300 count)

Directions:

Boil pasta until aldente, place in colander and submerge 3/4 in ice water to chill quickly. Thaw shrimp in a colander under running cold water and drain well.
In large mixing bowl place all other ingredients and mix well. Add shrimp and mix, coating shrimp well. Add chilled pasta and mix slowly but, thoroughly. Enjoy!
