Bubba's Shrimp Alfredo

Ingredients:

  • l lb Frozren salad shrimp (51-60 count)
  • 1 bunch green onion or scallions, minced
  • 1 cup sliced fresh mushrooms
  • 4 tablespoons butter or extra virgin olive oil
  • lemon-pepper seasoning to taste
  • cayenne pepper to taste
  • 4 cloves garlic minced
  • Sea sal t and fresh ground pepper to taste
  • 1 jar commercial Alfredo sauce (your favorite brand)
  • 1/2 cup white wine
  • 1/2 cup Parmesan/Romano cheese
  • Fettuccine ( l lb package)
  • (1 tablespoon sun-dried tomato paste)

Directions:

Saute mushrooms, scallions and garlic until mushrooms are brown. Use lower heat setting as not to scorch the butter or olive oil. Remember they have a lower flash point. Add wine to mixture.
Begin boiling water to cook fettuccine and cook when water is ready.
Thaw shrimp under running cold water. Drain well. Sprinkle with cayenne and lemon-pepper. Add to saute mixture and continue cooking for about 5 minutes.
Add Alfredo sauce directly to pan and reduce heat to med-low. Add Parmesan cheese and sun-dried tomato paste. Stir until Parmesan is melted.
Serve immediately over Fettuccine.
