Broccoli-Cheddar Meatloaf

Ingredients:

  • 24 saltine crackers, any variety
  • 1-1/2 pounds ground turkey
  • 1/3 cups chopped onions
  • 1/4 cup chili sauce
  • 1 tablespoon chopped parsley
  • 1 egg, beaten
  • 1 c. shredded cheddar (reduced fat) cheese
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
  • *ground beef can be substituted for turkey.

Directions:

Finely roll 12 crackers. Mix cracker crumbs with turkey, onions, 2 tablespoons of chile sauce, parsley and egg. On waxed paper, pat meat mixture into 12 x 8 inch rectangle.
Reserve 2 tablespoons cheese, sprinkle remaining cheese and broccoli onto meat mixture to within 1/2 inch of edge. Coarsely break remaining 12 crackers, sprinkle over broccoli, pressing lightly into meat. Starting at short end, roll up like jelly-roll fashion, using wax paper to help roll, seal ends. Place loaf in a 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 50 to 55 minutes. During the last 5 minutes of baking spread remaining 2 tablespoons chili sauce over meatloaf, sprinkle with reserve cheese.
