Shepherds Pie

This is my own version of Shepherds Pie.

Prep Time: 25 minutes
Cook Time: 3 hrs. 25 min.

Easy to Chew

Ingredients:

  • 2 Tbsp. olive oil
  • 1 1/2 lbs. ground beef or pork
  • 1 medium onion, chopped
  • 3 Tbsp. flour
  • salt & pepper to taste
  • 1 3/4 cups beef broth
  • 1 large onion sliced very thin
  • 2-3 carrots sliced very thin
  • 6 Tbsp. butter divided in half
  • 2 Tbsp. sugar divided in half
  • 4 medium baking potatoes
  • 1/2 to 3/4 cup hot milk
  • 2 Tbsp. butter
  • salt & pepers to taste (for mashed potatoes

Directions:

Heat oil in skillet add meat and brown chopping up large pieces. Add the onion cook for 2 minutes. Add flour to meat minture salt and pepper. Add beef broth. Stir until mixture has thickened. Cook over low heat 2 to 3 hours, adding liquid if it becomes to thick.In another skillet heat 3 tbsp. butter add onions then sugar cook slowly until the onions are soft and lightly browned.(Set aside in bowl) In same skillet repeat procedure with carrots.
Boil potatoes until soft. Mash, add hot milk and butter. Continue to mash until smooth. Salt and pepper to taste.
Lightly butter a 1.6 liter casserole. Spoon half of the meat mixture into bottom. Add onions then carrots. Add remaining meat to mixture. Top with the mashed potatoes. Sprinkle lightly with paprika. Bake in a 350 oven for 25-30 minutes, or until heated through.
Serve with salad and hot bread.
