Summer Squash

Easy to Chew


  • 1 1/2 pounds yellow squash, sliced
  • 1 tablespoon bacon drippings
  • 4 tablespoons butter
  • 2 tablespoons cream
  • 2 tablespoons grated onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper coarsely ground)


Boil squash until barely tender and drain well. Heat bacon drippins in heavy skillet and add squash when very hot. Stir until moisture is gone and the squash is in smaller pieces. Reduce heat; add butter, cream, onion, salt and pepper. Simmer for ten to fifteen minutes.
